Blueberry, coconut and cashew overnight oats

Oats is just an obvious choice when it comes to breakfast, it is comforting, nourishing, filling and delicious. Oats are also packed with health benefits..

Soothes nerves– Oats contain alkaloid gramine which is a natural sedative that can treat depression, anxiety and insomnia!

Digestion– Oats contain more soluble fibre than any other grain!

Diabetes– Oats prevent big spikes in blood sugar levels, and contain beta-glucan fibre which has beneficial effects for diabetics.

Reduces cholesterol– Beta-glucen which is found in oats help to reduce unhealthy cholesterol levels.

This recipe is with blueberries which are also full of nutrients that help with the below..

Prostate health (one for the boys)- contain a rich source of proanthocyanidin compounds which significantly slows the growth of prostate cancer cells.

Improved memory– increases levels of dopamine, a vital neurotransmitter that improves the memory.

Healthy gut– contains anthocyanins, antibacterial antioxidants effective against causes of gastroenteritis – (the worst thing in the world, if only I had known this when I got it!)

Recipe

-50-100g of oats (depending on how hungry you are)
-1-2 cups of coconut milk (depending on which you opted for)
-2 tbsp cashew cream (see cashew cream recipe in ‘snacks’)
-1 cup frozen blueberries
-1 tsp cinnamon

mix all the ingredients together and set in a jar overnight
