I love having an excuse to eat pancakes for dinner!! I wanted to make a simple recipe that didn’t involve protein… I think the maca and coconut sugar give these a lovely caramel flavour… let me know what you think and happy pancake day!
- 1 egg
- 1 banana
- 1 tbsp almond flour
- 1 tbsp maca powder
- 1 tsp cinnamon
- 1 tsp coconut sugar
Mix together the ingredients keeping the banana fairly lumpy. I fry one side and grill the top to stop them from sticking! Mixture makes 3 small pancakes!
Top with maple syrup, cacao nibs, coconut flakes and fruit!
