For the cake:
- x1 cup oats
- 1/2 cup self raising flour
- 1/2 cup sugar/stevia
- x1 tbsp. cinnamon
- x1.5 grated carrots
- x1 egg
- x1 tbsp. butter
- x1 gingerbread protein sachet (I used Whey Box)
- x1 cup coconut milk
- x1 handful chopped walnuts
Blend all of the ingredients and bake at 180 degrees for 1 hour.
For the icing:
- 150g Philadelphia
- x2 tbsp. sugar/stevia
- x1 tsp. cinnamon
- x1 gingerbread protein sachet
Blend the ingredients and generously cover over the cake/loaf.
