Carrot cake

For the cake:

  • x1 cup oats
  • 1/2 cup self raising flour
  • 1/2 cup sugar/stevia
  • x1 tbsp. cinnamon
  • x1.5 grated carrots
  • x1 egg
  • x1 tbsp. butter
  • x1 gingerbread protein sachet (I used Whey Box)
  • x1 cup coconut milk
  • x1 handful chopped walnuts

Blend all of the ingredients and bake at 180 degrees for 1 hour.

For the icing:

  • 150g Philadelphia
  • x2 tbsp. sugar/stevia
  • x1 tsp. cinnamon
  • x1 gingerbread protein sachet

Blend the ingredients and generously cover over the cake/loaf.
