Easy rhubarb crumble

One of my favourite desserts is rhubarb crumble! Part of my Easter present from my boyfriend’s Mum (as well as all my favourite chocolate and popcorn) was some home grown rhubarb fresh out of the garden. I probably should have been a tad more creative with it, but you just can’t beat a crumble, especially one as delicious and easy as this!

For the filling

  • 3 stalks of rhubarb stewed
  • 4 tbsp. honey
  • 2 tsp. vanilla

For the crumble:

  • 200g oats
  • 2 tsp vanilla
  • 2 tsp lucama
  • 150ml almond milk

Layer the crumble on top of the rhubarb and bake at 150degrees for 30-40 minutes until golden.
