I feel like I haven’t done a recipe in forever… so hopefully this one makes up for it!
Autumn is upon us and winter is creeping in, so it’s definitely appropriate for some comfort food to go with it. This is also pretty Halloween themed (which I will miss as I am heading off to find some sun for a week!), so you could maybe use your left over pumpkin *though I am not sure the recipe will work the same as I am using 100% canned pumpkin, but let me know if you do try!
You will need:
- 200g walnut flour (any nut flour would work)
- 200g canned pumpkin
- 2 tbsp honey
- 1 tsp. cinnamon
- 1 tsp. ground ginger
- 1/4 tsp. clove
- 1 handful of dried cranberries
Blend all of the ingredients, shape into cookies shapes and bake at 150 degrees for 30 minutes!
