Raw Vegan Cheesecake

As I have mentioned in previous posts, I LOVE cheesecake! I always preach how I don’t deprive myself of foods I want, (I am one of those freaks who genuinely craves whole pineapples or a head of broccoli as a snack!) … However, I very rarely indulge in Cheesecake these days, I am so put off by the processed awful nutrition in biscuits that I guess I am prepared to ‘deprive’ myself.. well, I try.

If all the restaurants and supermarkets in the world could get on board with sugar free, vegan and nutrient packed cheesecake that is as delicious as this, then that would be just fab, thanks!

Here is such a yummy recipe that I developed this week to satisfy my cheesecake needs, it is sugar free, vegan, and full to the brim of healthy fats and fibre! Plus, it is completely raw and super easy to make!

For the base:

2 cups of oats

1 cup dates

1/2 cup Tigernut flour, (or any ground nut)

1 tbsp honey

10 tbsp water

Place all of the ingredients into a good food processor and press into a baking tin.

For the middle layer:

200g of soaked cashew nuts (soak in water for 3 hours or more)

5 tbsp coconut milk

1 tbsp honey

1 tbsp coconut yogurt

2 tsp lucama powder

1 tsp coconut flour

Place all of the above in a blender/food processor and spread evenly onto the bottom layer, and place in the freezer for 3o minutes or longer

For the Final layer:

1 cup frozen raspberries

1 banana

4 dates

1 tbsp coconut yogurt

Blend together all of the ingredients, spread evenly over the middle layer and place in the freezer for 2 hours
