Garlic and mushroom buckwheat risotto

You may have noticed that the main and savoury meals section on my blog is rather sparse – I do eat proper meals and not just cakes, I promise!

I will admit to a huge sweet tooth, but equally find myself a huge fan of savoury food… basically I just love to eat all the things.

Winter has well and truly set in and so has my appetite for warming and comforting bowls of hot food, and this might just be my new favourite (it is also very easy to make with minimal ingredients!)

Ingredients:

  • 75g spring onion
  • 3 cloves of garlic
  • 150g mushrooms
  • 140g uncooked buckwheat
  • 320ml water
  • 1 cube of vegetable stock

Instructions:

Start by chopping the onion, garlic and mushrooms, before frying in a pan with some coconut oil. After a few minutes, add the buckwheat, water and stock and bring to boil. Cook for around 12 minutes, and simmer for another 5 before serving.

This dish can be enjoyed on it’s own or as a side – you can even add some meat or fish if you fancy!
