Gluten free Falafel

I often get stuck for lunch ideas, especially when I first started cutting out/down on meat. I absolutely love falafel and they’re so easy to make in big batches to put with salads.

To make 8 Falafels:

400g chickpeas

1 red onion

3 tbsp olive oil

2 tbsp buckwheat flour

2 tbsp nutritional yeast

1 handful of fresh coriander

1 tbsp cumin

1 tsp hot chilli powder

1/2 tsp turmeric

juice of one lemon

Combine all of the ingredients together in a good food processor, shape into 8 balls and bake for 55 minutes at 150 degrees.

I like to dress mine with tahini!
