Harissa quinoa and black bean bowl

  • 2 cloves of garlic
  • 2 red onions
  • 1 red pepper
  • 1 courgette
  • 5 stalks of broccolini
  • 1 cup black beans
  • 1 cup cooked quinoa
  • 1 tsp harissa paste
  • 1 whole lemon squeezed
  • salt and pepper

Cook the quinoa to the cooking instructions, usually about 10-15 minutes

As the quinoa is cooking, fry everything (except the black beans, quinoa, Harissa and lemon) in coconut oil until soft.

Add the cooked quinoa and black beans, Harissa, lemon, salt and pepper to the pan and cook for 3-5 minutes.
