Spirulina pesto green bowl

Spirulina is possibly one of my favourite ingredients, its so green and healthy! Absolutely packed with natural protein and vitamins.

One of my favourite easy go-to lunches is pesto and courgettie! I decided to give the pesto a little more protein..

To make the Pesto:

1 large handful of basil
1 handful of spinach
50g pine nuts
3 cloves of garlic
4 tbsp olive oil
1 lemon (juice)
1 tsp spirulina
1 tsp nutritional yeast (optional)
pinch of pink Himalayan salt
pinch of black pepper

Blend all the ingredients into a good food processor

For the bowl:

3 courgettes spiralized
1 can of butter beans
1 cup of broccoli

Mix with the spirulina pesto and serve
