Cinnamon and raisin loaf

As the biking hours are starting to pick up, so is the need for cake! Cycling and cake go hand in hand, didn’t you know? They do! Unfortunately for me, not many cafes accommodate for someone who loves cake but hates refined sugar – so I make my own. This cinnamon and raisin loaf is absolutely delicious, made even better with a nice thick spread of Pip & Nut!

  • 100g buckwheat flour
  • 60g oats
  • 50g ground almonds
  • 110g raisins
  • 1 tbsp. cinnamon
  • 1/2 tsp. ginger
  • 1/4 tsp. clove
  • 4 heaped tbsp. honey
  • 1 egg
  • 100ml almond milk

Blend it all up in a food processor and bake for 45 mins at 180degrees!
