Golden spiced muffins

It is officially the festive season aka the period when you absolutely do not have time to become bed ridden with a cold/flu, but it’s highly likely that you will be!

I am all about the preventative methods such as drinking my body weight in Manuka honey, turmeric, lemon and ginger drinks, so I figured what better way to get the good stuff in then to bake it all into delicious muffins!

150g coconut flour

100g oats

1 squeezed lemon

1 tbsp ground ginger

1 tbsp turmeric (I use Nature’s Heart Goldenberry, turmeric and coconut blend)

1 tsp cinnamon

1 egg

300ml coconut milk

Bake at 180degrees for 30 minutes!
