So I am coming to realise by the time that I want to blog my recipes that I never actually measure anything out, and I throw in whatever I want! If you are like me and can kind of judge constancy then here is a quick recipe for some cashew butter and banana, oat and nutty squares!
These were so yummy and had such a nice texture.. just like eating a piece of banana flapjack. I ran 19 miles in Richmond at the weekend and these were perfect to put a square into my water belt to eat half way around! My dad has always taught me to eat when I run so that when I come to do some really long endurance events my stomach will be used to it. Plus if you eat you won’t hit the wall or bonk like so many people do!
Me and my boyfriend also enjoyed a slice (or two) after our dinner!
2 cups of oats
1 cup of mixed linseed, chia seeds and goji berries (I buy this ready mixed from the brand Linwoods)
1 tbs cashew butter
1/2 cup of pumpkin and sunflower seeds
1 tbs honey
Mix it all up, throw it in a baking tray and put it in the oven for about 25/30 mins!
