Cashew and cranberry energy balls

Now that I am in between training again, I am back in the gym and leisurely training after work, rather than a 5am start! I bring a pack up to work everyday, and by the time it hits 4pm and I know that I will be training by 6pm, I really need a good afternoon snack to keep me going, usually in the form of energy balls!

To make 6 Cranberry and cashew balls:

  • 200g cashews
  • 50g dates
  • 35g dried cranberries
  • 1 tbsp coconut oil
  • 1tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp coves

Blend all of the ingredients into a good food processor, mould into ball shapes and enjoy!
