I am completely and utterly addicted to fruit and nut at the minute – thankfully a handful (ok, 5 handfuls) have replaced my protein bar addiction! I have also been loosely following a more paleo style diet, which has left me feeling great – I seem to thrive off fat. Anyway, I took the addiction one step further by baking the fruit and nut mix into some paleo cookies (no grains or dairy), which I would definitely recommend washing down with a cold glass of almond milk!
180g mixed fruit and nut (I mixed my own with goji berries, pistachios, cashews, walnuts, cranberries, macadamia nuts, Brazil nuts, almonds, sultanas, seeds)
- 100g ground almonds
- 2 tbsp coconut oil
- 1 (heaped) tbsp almond butter
- 1 tbsp maca powder
- 1 tsp cinnamon
- 1/2 banana
Super simple as always (because the days are t00 short and the to-do lists too long), blend it all up in a food processor, shape into cookies and bake for 20 mins at 150degrees!
Serve with an iced cold glass of (Rude Health) almond milk!
